Orange Yoghurt Cake
Greek Style with syrup
Cake Ingredients:200g Naked Planet Greek style Natural Yoghurt170g caster sugar170ml plant based milk170g fine semolina170g course semolina1tsp baking soda2 tsp vanilla essenceOrange rind from 1 orange
Syrup Ingredients:430g caster sugar350ml waterJuice from half an orange1 cinnamon stick4 cloves
Method:Add syrup ingredients together in a small saucepan, heat till boiling and sugar has completely dissolved. Leave aside to cool completely.
Add semolina and Orange rind to one bowl. Mix to combine. Leave aside.
In another bowl add Naked Planet Greek Style Natural Yoghurt, milk, sugar & vanilla essence. Whisk till sugar has dissolved. Whisk for 4mins.
Then add the baking soda and mix briefly once again.
Add dry ingredients slowly to wet ingredients and fold in slowly till mixed completely.
Cover with glad wrap and sit for 30min for semolina to absorb liquid.
Line a 25cm square baking tray with nuttelex and coat with semolina.
Pour cake batter into tray, cover with glad wrap and let rest for 30 mins again.
Bake in a oven at 170 degrees Celsius for 20min till golden brown. Remove from oven, cut cake intp diamond shaped pieces then pour cooled syrup directly over cake and sit for 30mins till syrup is absorbed.
Serve piece of cake with a dollop of Naked Planet Greek Style Natural Yoghurt.
